Day 138 - Bank Holiday Lap-sup


Yes the weather is nice and warm enough for me to wear sandals out AT LAST!

Bank holiday today. Everywhere must be crowded, hence my decision to stay in. Besides, need to rest those legs from yesterday's "marketing". Getting old.

Anyway, today I shall share another pasta dish. This is if you want a more refreshing taste, instead of tomato-ish or creamy base. I usually do this to clear leftover tuna I have from my tuna-and-bread routine during travels.

You'll need : Carrots and mushrooms (to add fibre and a touch of sweetness), a quarter of a lemon, coarsely chopped parsley and chopped chilli.

First fry the chilli with a little bit of oil and MEDIUM HEAT. High heat will fumigate your kitchen with chilli and your lungs will work extra hard with the spicy feeling.

next dump in your carrots and after a while, tuna. Dumping tuna into hot oil will have your tuna splattering everywhere.

once your tuna browns a little, dump in your fast-cooking mushroom.

let everything sweat a little.......

Then dump in your pasta.

mix everything nicely......

dump in your coarsely chopped parsley.

mix everything nicely......

and finally, squeeze in your lemon juice! Make sure this is your last step, or you'll end up with uneven lemon taste.

tadah! It shouldn't taste sour, but a little bit spicy with citrusy taste.

Cost breakdown (All prices, except for tuna and chilli, are from Waitrose)
Mushrooms - £0.14 (7 servings from a box at £1.00)
1 carrot - £0.038 ( 6 carrots for £0.23)
Flat leaf parsley - £0.27 (3 servings from a pack at £0.80)
Tuna - £0.18 (4 servings from a can at £0.80)
Condiments - £0.15 (salt, sugar, oil, chilli)
Penne Pasta - £0.063 (30 servings from a 1kg bag for £1.90)

TOTAL - £0.84
